Amidst the bustling streets of Sousse, Tunisia, we embarked on a quest to uncover the essence of Tunisian cuisine, starting with a street food classic: Lablabi. We realised that there wasn’t much information out there especially in the English language anyway. So, I am hoping this series will not only showcase the best of what Tunisia has to offer, but also allow travellers to sample some of Tunisia’s finest food.

Discovering Lablabi: A Taste of Tunisian Tradition

Lablabi is more than just a dish – it’s a culinary masterpiece that embodies the rich culinary heritage of Tunisia. A hearty chickpea stew infused with aromatic spices and served with a medley of toppings, Lablabi is a true delight for the senses.

The Art of Lablabi Preparation

The preparation of Lablabi is a culinary ritual in itself. First, a bowl is filled with half a stale baguette, providing the perfect base for the flavourful stew. You’re usually given the baguette to rip up and into small pieces yourself and form the base of the bowl. Next, the bowl is handed over to a kind gentleman who expertly loads it up with chickpea stew, harissa, a perfectly soft boiled cooked egg (or sometimes even raw – it gets cooked in the hot broth), tangy capers, and other tantalising ingredients. Finally, two spoons are provided to mix everything together, allowing the flavours to meld into a harmonious symphony of taste.
