Hout Quari: The Moroccan Big Mac

I bet you’ll never guess what those kofta looking things are. Even after you taste them, it’s likely that you won’t know.

The Moroccan sandwich! The Moroccan Big Mac! A very popular sandwich that is served in its individual components and you put it together. This is a real find and one that you’ll only see in the low-key spots where only locals frequent.

So what is it? It is not a red meat of any sort as it seems and actually tastes like. It is ground sardines! You get it served like this and then you put together the ground sardine meat, tomato sauce, raw onions, harissa and chopped olives into fresh piece of bread (which you butter first with clarified butter). The beauty of it is you get to stuff the bread with whichever component and however much you want.

The most amazing thing about this dish is that you cannot taste any fish in it whatsoever. Literally, everyone that has it is convinced it’s minced meat and not sardine. It really is genius the way they do it.

So, the sardine ball sandwich, whether you like fish or not, is a must try when in Marrakech… if you can find it (tip: show the picture from this post to someone..). While you’re in the area pick up a fresh orange or pomegranite juice to accompany this wonderful street eat.
