Bonci’s Pizzarium is a place you absolutely HAVE to visit when in Rome. Actually, it, alone, is a great reason for you to visit Rome!

Pizza al taglio

Pizza al taglio is a variety of pizza which was invented in Rome. It is a large, rectangular pizza loaded with toppings, cut with scissors into rectangular or square slices and sold by weight. This approach, as opposed to the normal round pizza, makes it easier for you to customise for both price and variety. 

Square pizza may be revolutionary to some, but to stand out in Rome, you need to go a step further. And Bonci does just that.  That’s Gabriele Bonci of Rome’s famous Pizzarium. He’s known as, “the Michelangelo of Pizza.”

You can find his original unassuming small pizza shop near the Vatican Museums. It is one of those places you travel all the way to Rome for. The fact that it is unassuming, always full of people and there’s no space to sit inside (you have to eat on the pavement outside) just makes it the ultimate charming and delicious pizza spot in Rome. It has consistently remained top of the list of Rome’s best pizza al taglio.

These pizzas are not mass produced, so you won’t find them all over Rome. Each and every slice has been hand-crafted and made with love and imagination. The creativity of the man is immense. The pizza lineup changes frequently, not throughout a season or month or week, no, throughout the DAY based on availability of locally sourced ingredients. He has created over 1,500 different pizza recipes. That’s insane.
