Bursa is a city in Turkey famous for being the capital of the Ottoman Empire, for its greenery and for one of the most popular dishes in Turkey: the Iskender Kebab. It is believed that a gentleman from Bursa, named Iskender Efendi, was the original creator of this dish back in the early 19th century and as a result it has been named after him too.
This dish
Iskender Kebab is one of the most popular dishes in Turkey amongst the locals and tourists. It is basically, Doner kebab served on pita bread, which is then topped with tomato sauce, melted butter and yoghurt. All these elements complement each other perfectly and it is no surprise how much of a revelation this was and continues to be in Turkey and beyond. Doner kebab is usually seen as fast food – something that is served in or with bread and to be consumed on the go. On the other hand, the Iskender kebab is more of a sit down in a restaurant type of meal where it is served on plate. A fancier affair if you will.
The history
As mentioned in the introduction, Iskender Efendi is the founder of this wonderful dish. Coincidentally, some also claim that he founded the Doner kebab, but that is debatable. The original restaurant (Kebapci Iskender) where he found this dish is still operating and has been doing so since 1867! It is located in Bursa. On some menus you will even see this dish named as Bursa Kebabi. Thankfully, they have branched out and have a few branches in Istanbul too! Be sure to be on the look out as you may bump into one of the descendants of the founder as they are often in their restaurants.
Our experience
As we sat down on the table, we were greeted with a sample of their really unique raisin juice. It was an interesting drink that’s for sure and we would’ve never guessed it to be raisin to be fair. An extremely lengthy procedure to make the drink and something you would have never tried before, so it is definitely worth trying.
Let’s talk about the thing you’re here for: the Iskender kebab. It is served in no time (I’m assuming most order this, so they are prepared). It comes beautifully presented and it looks extremely appetising. Within minutes someone will come with a hot pan of melted butter to pour over the dish and as you watch it sizzle it just makes your mouth water even more. Literally. Other than being the founder of the dish, this restaurant is also famous for using charcoal and not gas or electric (as most do) and also for using 100% meat (lamb & beef) and no fat. All of this adds up and results in a mouthwatering experience. You can taste the quality in the dish and the last minute melted butter not only adds theatre but an added flavour boost too.
Is this the best Iskender kebab I’ve had and how does it compare to that of what you can get in London? Well, in all honesty, I haven’t had this dish enough to be able to judge that. This was definitely delicious and it should be added to your Istanbul restaurants to try list even if it is just for the novelty and history.
